The Blind Brew: Why the Industry Standard Test for Gluten is Failing the Consumer
While you are venturing down the "Gluten Free" or "Gluten Reduced" rabbit hole, you will inevitably stumble across the acronym: ELISA. It is the industry gold standard, the gatekeeper that... Read more...
Beyond the Barley Monopoly: Why Ancient Grains Suit the Modern Gut
The assumption that barley is the sole provider of "body" and "mouthfeel" is a matter of tradition rather than chemistry. In a professional brewing context, malted millet provides a clean,... Read more...
Gluten-Free Beer Made with Barley? Understanding the UK's Confusing Labels
You might see a beer in a shop labelled 'gluten-free' on the front, but then find 'barley' listed in the allergens on the back. This can be confusing... Read more...
Are You Drinking Truly Gluten-Free Beer?
When it comes to gluten-free beer, the "GF" label might not tell the whole story. In the UK, beers can be labelled as "gluten-free" even if they're made from barley... Read more...
FAQ: What are malts and why are they important?
Think of malt as grain that has been given a bit of a wake-up call. We take raw seeds and put them through a three-step process. First, a quick soak. Next, they sprout just enough to unlock the sugars hidden inside. Finally, we toast them in a kiln to lock in those lovely toasted flavours and deep colours. Read more...
FAQ: Are your beers vegan friendly?
Yes they are. We prefer our beers to be as inclusive as possible and see no reason why vegan customers should be excluded from our finished beers. Typically beers are clarified and cleared using animal-based finings in the brewhouse. Instead we prefer to cold crash our beers to allow them to drop clear naturally and avoid using any animal products to begin with. We're sure our vegan friends are as keen to try our beers as our coeliac customers, given how few beers in the UK craft beer scene are... Read more...
FAQ: Are your beers coeliac friendly?
Yes, absolutely. Our beers are brewed using non gluten-containing ingredients (NGCI) and by maintaining a dedicated gluten-free brewhouse, completely avoid introducing gluten into our processes and finished beers. We pride ourselves in being an alternative option to most gluten-free beers in the market for customers looking to completely avoid gluten in their diets.  Read more...
FAQ: What's so different about your beers?
What makes our gluten-free beer different? It all begins with a simple, logical choice. We build every recipe entirely around non gluten-containing ingredients (NGCI). We never use barley or wheat. Instead of trying to strip gluten out at the end of the brewing process, we simply leave it out from day one. This keeps our beer naturally gluten-free and completely safe. To make sure the flavour is absolutely spot on, we malt our own selection of naturally gluten-free cereals and pseudo-grains. It is a sensitive, technical, hands-on approach to ingredients... FAQ: What's wrong with gluten free beer in the supermarket?
There's nothing wrong with the gluten free beer in supermarkets, although we do believe it obscures your consumer choice when trying to avoid gluten in your diet. Current UK and European laws applicable to product labelling allows breweries to label their products as gluten-free even when using gluten-containing barley and wheat in their beer recipes.  They are able to do this by using a simple process of adding brewhouse enzymes to partialy digest the present gluten into undetectable fragments during fermentation.  Since existing industry tests (ELISA R5) are unable to...
